The 7-inch hand-honed blade on this knife features a modest curve near the bolster and a straight cutting edge. The blade is long, slim, and flexible and is ideal for filleting fish or chicken; the thin edge allows the meat's fibers to be cleanly separated, making quick work of even the toughest tuna. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion.
